Saperavi

Winemaking

The grapes are destemmed, crushed, and macerated with their skins in stainless steel tanks. After fermentation, the wine is held briefly in tank prior to bottling. The aim is to obtain a wine with ample youthful fruit and a fresh, dry taste.

Grape Variety

100% Saperavi, the signature red grape of Georgia. The name translates as “dye.” It is known for its bluish-black skin and tinted or dyed juice, an exception among wine grapes.

Vineyard

This red wine is sourced from vineyards in Kakheti, Georgia’s most important wine region. The vineyards are situated in the Alazani and Iori River basins at elevations of 1,300 to 2,300 feet. Soils are primarily alluvial in composition.

Tasting Note

This Saperavi offers an aroma of dark fruits such as blackberry and black currant with a background of dark chocolate. It is fleshy, chewy, and generously flavored, finishing dry. It can be enjoyed when it is young with grilled or roasted meats, pasta with meat or tomato sauces, or spicy dishes.

It may be compared in style to other unoaked red wines with moderate alcohol such as some Australian Shiraz (Victoria), Rhône Valley Syrah (Crozes-Hermitage) or a Barbera from Italy.
